Garam Masala

Ingredients

Makes ¾ Cup (adjust this for ½ cup)

• Peppercorns 1 tbsp
• Cinnamon Sticks 5 oz
• Star Anise 4
• Mace 2 tsp or 8 whole blades
• Cloves 1 tbsp
• Green Cardamom 20 seeds
• Nutmeg 1 large seed
• Bay Leaves 4
• Coriander Seeds 1/3 Cups
• Jeera / Cumin Seeds 1/8 Cups

Method

• Heat all the whole spices in a pan on the stove over low heat until fragrant.
• Grind all the Spices in a Food Processor until it reaches a fine powder.
• Add any powder spices at this stage.
• Store in a glass jar in a cool dry place.
