Fried Bakes

Fried bakes are a caribbean staple breakfast, or snack. Usually stuffed with various fillings such as saltfish, cheese paste, smoked herring or corned beef.

Ingredients

• All purpose flour (1 cup)
• Baking powder (1 tsp)
• Salt (pinch)
• Sugar (1 tbsp)
• Water (½ cup)

Method

• Mix dry ingridents together
• Mix in water till it forms a smooth dough
• Let sit for 20-30 minutes
• Divide into 4-8 portions (depending on desired size, I prefer 8)
• flatten by pushing into round discs with fingers, flip do the same
• Heat neutral oil with high smoking point to 350 celcius - 375 celcius
• Gently place uncooked bakes in the hot oil, about 1-2 minutes per side
• Remove into a dish with paper towels to soak up oil.

Fillings

Salt fish

Salt fish is a caribbean staple served with either bakes or provisions.

Ingredients

• Salt fish (125g)
• Red minipepper (2 chopped finely)
• Garlic cloves (2 chopped finely)
• Shallot (1 chopped finely)
• Cilantro/Parsley/Green Onion (3 tbsp chopped finely)
• Tomato (1 crushed, optional)
• Thyme (¼ tsp)
• Black pepper (1 pinch)

Method

• Rinse salt off of salt fish
• Fill medium size pot with water (half way)
• Bring to a boil and boil the salt fish for 10-15 minutes after
• Rinse in cold water and shred to desired flakes
• In a sautee pan with 1 tbsp olive oil, sautee onions, tomato, peppers, garlic
• Add thyme and black pepper
• Add ½ cup of water and stew until desired consistency (I prefer semi-dry)

Cheese paste

Ingredients

• Cheddar cheese (2 cups thinly shredded)
• Mayonaise (2 tbsp)
• Yellow mustard (1 tbsp)
• Butter (Room temperature 2 tbsp)
• Nutmeg (¼ tsp)
• Black Pepper (1 pinch)

Method

• Mix and mash together with the back end of a spoon until smooth
